Tajima
A strain of Japanese Black cattle from Hyogo Prefecture, the genetic basis for Kobe beef.
Tajima cattle are smaller than other Japanese Black strains but known for exceptional marbling. All authentic Kobe beef comes from Tajima-gyu cattle. Tajima genetics have been exported and are raised in Australia and the US, though not certified as Kobe.
